The process
Natural
The whole cherry dries with the bean inside, which gives natural coffees more sweetness, body and fruit.
Natural process
Step by step
- 01 / 05Harvest
Only ripe red cherries are picked by hand.
- 02 / 05Sorting
Cherries are floated in water; underripe and damaged fruit is removed.
- 03 / 05Drying
The whole fruit dries in the sun for three to four weeks, turned many times a day.
- 04 / 05Resting
Dried cherries rest so moisture settles evenly through the bean.
- 05 / 05Hulling
The dried skin and fruit are removed in one step, then graded for export.
