The process
Washed
The fruit is removed before drying, so the flavour comes from the bean itself. Washed coffees taste clean and bright.
Washed process
Step by step
- 01 / 06Harvest
Only ripe red cherries are picked by hand.
- 02 / 06Pulping
The skin and most of the fruit are removed the same day.
- 03 / 06Fermentation
The beans rest in tanks for 12–48 hours to loosen the sticky mucilage.
- 04 / 06Washing
Clean water rinses the beans until they feel like gravel.
- 05 / 06Drying
Two to three weeks on patios or raised beds, turned by hand.
- 06 / 06Milling
The parchment is removed and the green coffee is graded for export.
